    Why rum

    Because it rewards attention. A cane spirit carries its island, its still and its barrel more plainly than almost anything else behind a bar — and because so few places on Corfu take it seriously, every bottle we found we could actually keep.

    How it was gathered

    Slowly, and mostly by asking. A bottle at a time, from importers, from closing bars, from people who knew we would open it rather than shelve it. Nothing here was bought as a set.

    However you like — but ask the bar first. Some of these are best neat and at room temperature, some want a single large cube, and one or two are worth the three minutes it takes to explain why.
